Week 14 – Caramilized Figs and Greek Salad

Week 13.52 - Caramalized figs

Figs are in season now and I haven’t got much chance to click them before, so I devored this opportunity to cook something with figs and take lot of photographs. Turns out green figs are really difficult to photograph, because of less contrasting colour within them.

Caramelized Figs served with Yogurt or Dahi

5 – 6 ripe figs
1 tablespoon sugar (granular)
1 cup thick yogurt, even flavored is fine or dahi/curd (preparation instructions below*)

Wash and cut the figs in halves while retaining the stem. Heat a small non-stick pan till it’s quite hot. Dip the halves, keeping the cut side down in the sugar. Sear the figs in the pan for a minute or even less, will depend on the heat. The sugar will caramelize and for a hard coating on the figs. Serve immediately with yogurt or curd.

* If using curd, hang the curd in a muslin cloth, or sometimes i don’t even have that so i simply drain the curd in a tea strainer. Drain it for a couple of hours, remove and mix it with a teaspoon of sugar. Serve on top of figs.

Greek Salad

For the dressing –

1 tablespoon extra virgin olive oil
Minced coriander leaves about a tablespoon
Salt and Pepper to taste
1 tsp red wine vinegar
1 tsp sugar

For the salad –
1 small bell pepper
1 small onion sliced
50 gms sliced cheddar or any kind of cheese
1 cup black olives
1 tsp red wine vinegar
1 cup diced cucumber
1/2 cup diced tomatoes

Mix the dressing ingredients in a small bottle and rigorously shake to mix well. Mix the salad ingredients and pour over the dressing. This can be served with a hard crusted bread.
