Week 39 – Quick Pasta
A very simple pasta recipe using fresh herbs.
Spaghetti – 1/2 packet – boiled according to packet instructions, drain it and toss it with a 1 tsp olive oil
tomatoes fresh – 4 medium sized, blanched and skinned
fresh herbs like rosemary, basil, thyme or use a mix of dried herbs, around a small bunch
salt and pepper to taste
1 clove garlic minced
1 small onion finely chopped
1 tbsp olive oil
Heat oil in a pan. Add the onions and garlic to the oil. Let it saute for a couple of minutes. Add the tomatoes chopped, add the seasoning, and herbs. Let it simmer for around 15-20 minutes till soft. Pour the sauce over the pasta and serve immediately.
