Fried rice with Asian salad
If you have leftover rice, this is a perfect dish for that. I quickly sauteed some spring onions with garlic in olive oil. Added sliced carrots and sauteed for another couple of minutes before adding rice. Topped this with soy and hot and sour sauce. Instant dinner is ready. For the salad, I marinated sliced cucumber and carrots in vinegar, hot and sour sauce with a pinch of sugar and salt for around an hour.
